Why choose between a banana loaf and a cereal bar? This does both with a slightly sweet banana taste and the crunchy oat and nut texture of a bar.
Ingredients
- 100g butter
- 75g golden syrup
- 2 ripe bananas
- 250g oats
- 50g nuts - we used a mix of chopped Brazil and almonds
- 1 tablespoon sesame seeds
Method

Preheat the oven to 190C/170Cfan. Rub butter all over a 900g (2lb) loaf tin. Cut a piece of greasproof paper to fit along the bottom and up the short sides of the tin.

Melt the butter and syrup in a small saucepan.

Peel the bananas, put into a bowl and mash with a fork.

Add the melted butter mixture, oats, chopped nuts and sesame seeds and mix together.

Spoon into a the tin and bake for 25 mins. Leave to cool, chill in the fridge and then cut into bars.
