Our favourite instant ice cream - sweet mango with a hint of lime and a touch of mint, it’s a total dream on hot days.

Keep a look out for frozen fruits in supermarkets, they are often really good value. This ‘ice cream’ works well with other frozen fruits too like pineapple or a mixture e.g. mango, banana, kiwi & pineapple.

Ingredients
  • 250g (half a bag) of frozen mango 
  • 250g (half a big pot) Greek yogurt 
  • juice of 1 lime – add the zest too if you like
  • 
2 tablespoons brown sugar
  • 
few mint leaves

All the ingredients go into a blender or a food processor or a jug if you have a hand held blender.

Quickly blend until smooth, don’t over blend, you need to act quick for an instant ice cream.
